Pumpkin Banana Loaf

As the weather cools and leaves start to fall, nothing beats the comfort of a warm, homemade loaf that blends the best of autumn flavors. This Pumpkin Banana Loaf is a delicious twist on classic banana bread, incorporating creamy pumpkin purée for a moist and spiced treat.

Ingredients:

  • 2 ripe bananas (mashed)
  • 1 cup pumpkin purée
  • 1 ½ cups flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp ground ginger
  • ⅓ cup melted butter
  • 2 eggs
  • ¾ cup sugar
  • 1 tsp vanilla extract
  • Optional: chopped nuts or chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a bowl, mix the mashed bananas, pumpkin purée, melted butter, sugar, eggs, and vanilla.
  3. In another bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and ginger.
  4. Gently mix the dry ingredients into the wet mixture, stirring until just combined. Fold in nuts or chocolate chips if desired.
  5. Pour the batter into the prepared loaf pan and bake for 55-65 minutes, or until a toothpick inserted comes out clean.
  6. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
